I made a potato and cheese pie recently but it didn’t have much taste. What would chef recommend?
Danielle Jones, Carnforth
A CHEESE and potato pie can sometimes be a bit lacklustre due to not using a strong enough cheese or by a lack of seasoning. Make sure that you use a good quality mature cheddar cheese for the pie filling and make sure that you season it well with salt and freshly milled pepper. Add plenty of chopped fresh chives to enhance the onion flavour. If you are making your own pastry, add some mature cheddar and some grated parmesan cheese into the pastry as well, it will help flavour the pastry. Before you bake your pie, give it a good brushing with some beaten egg to give a super golden brown colour when baked. It’s all about adding more flavour into the basic recipe or enhanced the flavours already there.
