I’m going to a party and have to take a vegan dessert. Has chef any suggestions?

A VEGAN is a person who doesn't have any animal products in their diet, so doing desserts can be a bit tricky. You will need to buy some suitable ingredients to complete this dish but supermarkets these days have a vast range of 'free from' ingredients and products. For this recipe you will need some vegan chocolate, coconut oil and some vegan gingernuts or similar biscuits. I'm suggesting making a vegan tiffin and serve it with some blackberries and vegan ice cream. Lightly oil a 20cm square tin with coconut oil and line with baking parchment. Melt 200g of vegan chocolate, 75g coconut oil and 2 tbsp golden syrup in the microwave in 30 second bursts until smooth and glossy. Crush 200g vegan gingernut biscuits or a similar biscuit in a bowl, then add 100g dried cranberries and 50g toasted and chopped pistachio nuts. Add the chocolate mixture and give a good stir to combine. Spoon the tiffin mixture into the lined tin. Use the back of a spoon to smooth the top and to press the mix into the corners. Chill in the fridge for a least 2 hours, then portion. Look for some vegan vanilla ice cream to serve with the tiffin and garnish with some fresh blackberries.
