My kids love pancakes but I do always try to get them to have fruit instead of sugar or syrup. Savoury pancakes work just as well. Something like spreading your warm pancake with crème fraiche, adding smoked salmon and rolling up then cutting into pieces would work well. How about buying some crispy duck, warm through the oven and flake over the top of your pancake, add some shredded leek, cucumber and hoi sin sauce, again roll up and cut into pieces. For a lovely warm vegetarian pancake, make your pancake mix slightly thicker and no sugar, but season with salt and pepper, cook your pancake as normal and when you have flipped it, top with some diced feta cheese, chopped roasted peppers and drizzle with plenty of olive oil and a sprinkle of chopped basil. For a more non-traditional pancake, make an American pancake batter but add some chopped chilli, crushed peas and some shredded cooked chicken, cook in the traditional way and serve with a wedge lime.
