Head chef at the award-winning Drunken Duck, near Ambleside, is Nick Foster, one of Lakeland Speciality Foods' very satisfied customers.
"You know exactly where the meat is coming from and how it has been treated, even down to the way in which it was slaughtered. This is all reflected in the quality of the meat."
Nick has been so impressed by the product that he's been helping LSF develop a range of gourmet burgers and sausages it's all part of his whole beast and nothing but the beast philosophy. "I source what I want to use and then create the menu for it. And I use everything from the animal not just prime cuts, shin, heart, the lot. That way nothing of this quality animal goes to waste."
