WHEN it comes to the weekend it is more often the case you become transfixed on what to have for a well-deserved, post week-at-work breakfast and dinner.
Fantasising about an English fry up and fussing over an indulgent night-time feast almost always leads to a neglect of Saturday’s lunch.
And no matter how hard you try, you won’t get through to tea-time without having a ‘little something’ to keep your hunger at bay.
So, if like me, you find yourself at a loss on a Saturday in food limbo and don’t want to have yet another sandwich, or yet another bowl of soup, then do your shopping with lunch in mind.
To get your tastebuds tantalised, why not try a Mexican quesadilla?
Just use a shop-bought flour or corn tortilla make your own tomato salsa by finely cutting up tomatoes, red onions, green chillies, coriander and drizzling over lime.
Head to the Courtyard Dairy, Settle, where they have Ogleshield at £24 per kilo - an English Raclette-style cheese which means it’s perfect for melting in your Mexican sarnie.
They also have an English camembert called Tunworth at £7.95 each (250g) which is perfect for baking, or dipping bread into for a lunch-time treat.
Alternatively, give your Saturday an Italian twist with the traditional bruschetta.
Hazelmere Cafe and Bakery, Grange-over-Sands, has a farm-house white bloomer at £1.69.
Cut it up in slices and give it a few minutes under the grill on both sides.
Rub the toasted bread with garlic and layer thinly sliced salad tomatoes, sprinkle over salt and pepper and finish off with basil leaves and a oil.
They also have a new summer antipasto range to compliment your bruschetta.
Pick up a tub and mix and match sunblushed peppers, balsamic onions, olives in puttanesca and more for £2.50. To liven up your classic bruschetta, add roast courgettes from Growing with
Grace, Clapham, at £3.50 per kilo with their fresh garlic at £1 per head, and over drizzle balsamic glaze.
They also have mini cucumbers at £1 each which would be perfect on toast with grilled Cornish mackerel from Kendal Fisheries at £8.95 per kilo, red onion and a dollop of horseradish.
If you’re looking for something a bit more substantial but easy enough for the weekend, Watson and Woollard, Kendal, has Chinese or salt and pepper spare ribs at £6.95 per kilo to stick in the oven and enjoy with a pile of fresh salad.
You could even try their belly pork at £6.25 a kilo. Roast it and shred it to put in your quesadillas or on top of toast with your salsa with melted cheese.
And for something fresh and tasty but without the hassle, Burton Community Stores has a range of their own hot and cold sandwiches from £2.20 to £2.90 with a range of fillings that include bacon, brie, ham, tuna, different cheeses and salad.
The same goes for Baba Ganoush, Kendal, where they have quiche or ploughmans salad boxes at £4.95.
Choose from a range of salads plus a quiche, or plus a selection of meats and cheeses.
