Although Greek salad is a fairly traditional recipe I'm pretty sure there are thousands of variations across the world. For me you should look at buying the best quality ingredients you can for your budget or maybe even use your own home grown tomatoes and cucumber?
For four people, cut one small cos lettuce into medium sized pieces, give a quick wash and a dry. Peel one cucumber, cut to 2cm cubes, cut 3 lovely ripe medium sized tomatoes into a 2cm dice. Very thinly slice half a red onion and dice on de-seeded red pepper. Place all the salad items into a large bowl. Add 150g diced feta cheese to the bowl, make sure you buy an authentic Greek feta, not a northern Europe imposter! Add 50g pitted Kalamata olives. To make the dressing, mix together 50ml red wine vinegar with 125ml good quality olive oil. Add about 10 leaves of freshly chopped oregano and a few twists of freshly milled black pepper. Pour the dressing into the bowl, give a good toss, then divide into four small bowls. Serve with some warm flatbreads.
