MEMBERS of the Kendal College Culinary Team, Martin Frickell and Matt Campbell, beat off stiff competition in the shape of seven other colleges to win the finals of the UK Seafood Championship.

The event, held at Grimsby Institute of Further and Higher Education, challenges contestants to creative imaginative dishes using some of the less popular species of fish.

Their dinner selection of baked, encrusted cod, Alaskan Pollack chowder, followed by a main course of poached halibut in red wine won over judges Austin Mitchell, renowned seafood TV chef and cookery writer Michell Tonks from the Fishworks restaurant chain and Steve Norton, Chief Executive of the Grimsby Fish Merchants’ Association.

Mitchell Tonks said: “The standard of cooking has been brilliant. The simple dishes reflect the trends in food: it’s about letting good quality ingredients be the star of the show. So far, Kendal College’s start of Pollock with bacon crumbs, pea puree and qual’s eggs stands out. It was phenomenal and perfectly cooked”.

Chef Lecturer Yannick Lequitte said “We were up against much bigger colleges such as West minster and University College Birmingham, but the students managed to produce three outstanding dishes which made the right impression on the judges. I believe both of our students deserve the accolade”.

Martin is studying NVQ 3 Pastry and Confectionery at Kendal College and Matt is completing Level 2 Culinary Arts.
